According to the United Nations, there are more than seven billion people on Earth today with some predicting the number could double by 2100. This means people need to start finding new foods urgently because the world has MANY mouths to feed!

“A gloomy forecast for the planet isn’t the only reason to study foods for the future. It’s a creative quest that will enlist people who can think in new ways about existing plants and animals — even insects.”
